Crab and Cheese Stuffed Flounder

6 flounder fillets
8 oz imitation king crab meat
1 c. non-fat cheddar or mozzarella cheese, grated
juice of one lemon

White Sauce
4 Tbs. liquid butter buds
4 Tbs. flour
1 egg beater (1/4 cup)
2 c. evaporated skim milk
1 tsp lite salt (optional)
dash cayenne (optional)
1/4 c. sherry or dry vermouth (or cooking wine)

Mix together butter buds with flour until a paste is formed. Stir until it boils. Add lite salt. Stir in the sherry, skim milk and the beaten egg beater, cook one minute. A few grains of cayenne may be added. Add the imitation crab meat and cook until heated through. It should be thick. Place the flounder fillets in a pan after brushing with liquid butter buds to coat. Sprinkle with lemon juice. Cook under broiler 1 minute on each side. Spoon crab meat mixture into each cooked flounder fillet, Top with grated cheese and return to broiler just long enough to melt the cheese.
