Cheese-Topped Chicken Breasts

Satisfy the appetites of your dinner guests with these cheese-draped
chicken breasts.

1 clove garlic, minced
1/4 cup butter or margarine
1/2 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon ground white pepper
4 large skinless and boneless chicken breast halves
2 cups sliced fresh mushrooms
1 medium sweet onion, thinly sliced
8 slices Monterey Jack or Swiss cheese (4 ounces)

1. In a skillet, cook garlic in hot butter or margarine for 30 seconds.

2. In a shallow bowl, stir together the all-purpose flour, the salt and the
pepper. Coat the chicken with the flour mixture, coating evenly on both
sides.

3. Cook the coated chicken breasts in the melted butter in the skillet for
20 minutes or until chicken is tender and no longer pink, turning once.
Remove from pan to unheated rack of a broiler pan.

4. Cook mushrooms and onion in skillet until just tender. Spoon over each
chicken breast half. Top with cheese.

5. Broil the chicken 4 to 5 inches from heat for 1 to 2 minutes or until the
cheese melts.
