6 (1-cup) servings |
| 1/4 cup granulated sugar substitute |
| 1/4 cup unsweetened cocoa |
| 1 cup water |
| 2 tablespoons instant coffee granules |
| 4 3/4 cups fat-free milk |
| 1/2 teaspoon peppermint extract |
| Sugar-free peppermint stick (optional) |

Combine sugar substitute and cocoa in a medium saucepan; stir well. Add water; bring to a boil, stirring constantly. Stir in coffee granules. Gradually add milk, stirring well. Cook over medium heat 5 minutes or until mixture is thoroughly heated, stirring often. Remove from heat, and stir in peppermint extract. Beat with a wire whisk until foamy. Serve warm.
