Marinated Roast Tenderloin

5 lb. whole beef tenderloin
Ground pepper
2 cloves garlic
1 1/2 c. soy sauce
1/2 c. bourbon
4 strips bacon
1 medium onion, sliced

Directions:


Sprinkle pepper on roast. Place roast in large zip loc bag. Add garlic, soy
sauce and bourbon to bag. Close bag and gently shake to evenly distribute
ingredients.
Marinate at least 6 hours in fridge or 2 hours at room temperature.
Preheat oven to 400 degrees.
Place roast on broiler pan with rack. Evenly spread bacon slices on top,
then pour marinade over top. Add onions on top of that.
Place in preheated oven and roast for approximately 30 minutes. Use meat
thermometer to be sure you get a medium rare, juicy roast.
