Easy Cheeseburger Salad for One

1/4 pound lean ground beef
1/8 teaspoon garlic powder
1/8 teaspoon onion powder
salt & pepper, to taste
2 cups Romaine lettuce
2 ounces cheddar cheese, shredded
2 teaspoons sour cream

In a small skillet, brown ground beef and drain if necessary. Add salt and pepper to taste and the garlic and onion powders. Mix well. Add cheese on top until they melt...do not mix. In a bowl, tear lettuce leaves. Add beef mixture carfully...try not to topple the melted cheese! Top with sour cream or other condiments and enjoy!!

One serving @ 4.1 carbs minus 2.6 grams fiber= 1.5 carbs and 36.3 grams protein


In a large skillet, cook beef in oil until browned, about 4 minutes; drain. Remove and set aside. In the same skillet, sauté onion, peppers and garlic in butter until crisp-tender. Add tomatoes and seasonings; mix well. Return meat to pan; bring to a boil. Reduce heat; cover and simmer for 35-40 minutes or until meat is tender. Serve over rice.
